Combined Smokehouse and Barbecue: Specify Each Zone

A smokehouse combined with a barbecue does not have uniform conditions in every place. The hearth, smoke channel, grate, and food chamber function differently. First, decide how each part will be used, and only then select bricks and calculate mortar.

Describe the way both functions operate

On the diagram, mark the source of fire, the smoke path, and the adjustment points provided in the design. Determine whether the functions operate separately or simultaneously. The course of the duct and the placement of equipment should result from this arrangement, not from the leftover space after building the firebox.

The hot hearth requires assessment of temperature, heating cycles, and contact with fuel. In cooler parts, moisture and deposition of contaminants are also important. Surfaces that come into contact with food are not selected solely based on the thermal resistance of the material.

Select material for each zone

Vitcas firebricks can be specified for a suitable lining in the hot section. Check the size and support together with the grate, doors, and openings. Metal equipment may need space to accommodate dimensional changes during operation.

The manufacturer describes Outdoor Oven Cement for compatible exterior fireboxes in smokehouses and barbecues, among other applications. Choose the mortar according to the brick and the designed joint. Its weather resistance does not replace proper water drainage or the required protection of other materials.

Conduct a handling test on the sketch

Check the removal of the grate, ash disposal, and access to areas where deposits collect. A countertop, shelf, or decorative wall should not block such access. When changing the direction of the channel, determine how to later inspect its interior.

Before the first use, check the completeness of the system and the required drying of new layers. Keep the drawing and the photos of the channels before covering them. If a problem with flow or the joint occurs later, the documentation will help assess a specific area instead of randomly altering the entire integrated system.
